Failed Empanadas (sp?)

Yesterday, my mom put me in charge of dinner, so i decided to make something exotic and complicated: empenadas.  Well, okay, they aren’t that complicated, but it was certainly something new.  The first batter came out too running since i accidentally added too much water and I had accidentally stuffed the second batter too much with the filling so there were random pieces of broccoli and mushrooms sticking out once the little things managed to bake.  Regardless, i need practice making savory items.

I have cross country conditioning today, and i really hope that it’s not a difficult run like yesterday’s.  My shins have been feeling better, though, i’m still worried about having to take a week off.  After all, i really want to get 300 miles in this summer.

Oh well, the season’s more important than summer training anyway.

Do you/did you play a sport in high school/college??

I certainly never thought i would considering i have no hand-eye coordination, but running turned out to be something really positive in my life because of great teammates and encouragement from my family members.

Protein muffins

Ugh, my shins have been hurting me and it’s really frustrating because every single time I start running, shin splints attack! Grrrr…. So I took an extra day off, but after running pretty fast (lol to me) yesterday, my shins were bothering me today on my run. Also, my ankles were kinda sore, so idk what that was about.

But once i got in, i had some delicious, ginormous muffins to look forward to that would provide me with a whopping 10 grams of protein 🙂 not to mention, the peanut butter i put on them would add a bit extra protein as well so for breakfast i got close to 20 or so grams of protein.  And who says that vegans don’t get protein 😉

just imagine dark chocolate peanut butter on top 😛

Ingredients:

–1 cup of green tea with a bit of stevia in it (or sugar)
–2 cups of whole wheat flour
— 6 Tablespoons of protein powder (or sub flour)
–1/4 cup of sugar
–2 teaspoons of baking powder
— 1 banana
–1 tablespoon of oil
–1 teaspoon of stevia
–2 tablespoons (or more) of chocolate chips
Steps:
1. Brew your green tea and preheat the oven to 375 degrees F.
2. Mix the dry ingredients, besides the chocolate chips, and then, in a separate bowl, mix the wet.
3. Mix the dry and wet ingredients together and then fold in the chocolate chips.  Add water to the mixture as needed (start off with less and then add more).
4. Fill up your muffin liners and bake for 25 minutes or until you can stick a toothpick in it and it comes out dry.
*makes six big muffins or 12 mini muffins 🙂
I’ve eaten these twice in a row for breakfast– once with banana and peanut butter and then another time with cashews ❤
There will definitely be more muffin recipes to come 😀 because I’m currently obsessed with muffins, but tomorrow, i think I’ll post something savory.

Muffins Galore :)

Sorry i haven’t been posting much. My computer doesn’t really like me and often times it’s difficult to post certain material.  *sigh*

My brother’s in Philadelphia right now on a mission trip through our church and so I’m left here all alone at home 😦 (Well, it’s not so bad…). Therefore, to let up on some boredom, I made muffins which I’m currently obsessed with :).  Also, later I plan to roast up some chickpeas which i hear are very good :P.

lol, these are so tiny!

Here’s one of the recipes:

Ingrediants:
— 2 cups of flour
—  3 teaspoons of baking powder
— 1/2 teaspoon of salt
— 3/4 cup of chocolate chips
— 1/3 cup of sugar
— 3/4 cup of non-dairy milk
— 1/3 cup of oil
— 1 teaspoon of vanilla extract
— 1 teaspoon of stevia extract
— 1 flax egg (1 tablespoon of ground flaxseeds mixed with three tablespoons of water).
 
Steps:
1. Preheat oven to 400 degrees F.
2. Mix the dry ingredients.
3 Mix the wet ingredients
4. Combine the wet and dry ingredients.
5. Fill muffin liners with the dough and bake in the oven for around 20 minutes.
*Makes 12 mini-muffins or 6 large ones 🙂
So, I was super proud of myself today because I ran five miles in around 45 minutes.  Hehe, that’s pretty fast for me, but I’m taking a day off on Friday because I feel those terrible shin splints coming on and I do not want to get them before cross country season even starts!
Tomorrow be prepared for another muffin recipe but this one is even better!
Also, if you don’t have stevia, just up the amount of sugar to about 1/2 cup 🙂 — unless of course you like less-sweet muffins.

I have not fallen off the face of the earth

I’ve just been tired, and it has come to my attention that my crepe recipe did not show up on the blog.  I apologize.

Here it is:

Ingredients:

–1/4 cup of flour

–3 tablespoons of brown rice protein powder ( or any other)

–1/2 cup of non-dairy milk

— Some sweetner if desired

Steps:

1. Heat some oil on a pan

2. Mix the dry ingredients and then incorporate the wet.

3. Pour some batter onto the pan and let it cook it on medium-low until the top is evenly golden brown and dry.

4. Enjoy 🙂

*Makes about 3

So, this morning I went with a local running group to go out running.  My coach was there and so was a friend of mine who had recently graduated.  It was a hard five miles because i only got like four hours of sleep (everyone knows you need to run as many miles as the hours you slept (jk)).  I was super paranoid last night after watching paranormal activity 2.  Nearly gave me a heart attack and it really disturbed me, but nothing a little coffee couldn’t fix.  My friend and I went to a coffee shop after our run and picked up an ultra decadent frappuccino 😛

Also, this week, I made another batch of muffins (this time chocolate chip 🙂

Super good chocolate chip muffins 😛

I’ll post this little recipe tomorrow 😉

Yummy crepes! :P

So, I woke up this morning craving pancakes, so i got up and began making them and so on and so forth when i realized I only had a tinsy bit of baking powder left that i wanted to save for other baking creations.  So i thought: now would be a good time to experiment with a crepe recipe!

Father’s Day!

Happy Father’s Day Everyone!

I certainly had fun :).  My dad took me out driving (to get in more hours for my permit), and then, I made him a batch of muffins.  He wanted chocolate-chip muffins with pine nuts, so i whipped up a batch based on a recipe online.  I meant to take a picture, but my phone wouldn’t save it, and unfortunately, I don’t have a camera.

But here’s the recipe if you wanna try it out 🙂

I call them: Crunchy Java Chip Muffins

Ingredients:

-1 cup of flour (i used white whole wheat)

-1 and 1/4 teaspoon of baking powder

-1/4 teaspoon of salt

-1 teaspoon of espresso powder

-1/3 cup of agave nectar

-1/4 cup of oil

-1 and 1/2 teaspoon of flaxseed mixed with 1 and 1/2 tablespoon of water

-1/2 cup of nondairy milk (i used vanilla almond milk)

-1/2 teaspoon of vanilla (unless you use vanilla almond milk)

-1/4 cup of chocolate chips (or however many you want!)

-1/4 cup of pine nuts (or try any other nut!)

Steps:

1. Preheat the oven to 375 degrees F.

2. Mix the dry ingredients (besides the chocolate chips and pine nuts)

3. Mix the wet ingredients.

4. Combine the wet and dry. 

5. Fold in the chocolate chips and fill up some muffin paper things with the dough.

6. Cover each little muffin with the pine nuts

*makes six big muffins 🙂

Oh yeah! and enjoy 🙂

I also did the dishes for my dad cuz he likes it when he doesn’t have to do the dishes.

So sore…

So yesterday, I was going to post, but i was just so exhausted after I ran.  Conditioning has started, and I ran six miles for the first time in my life.  Granted, it took me around an hour to complete it and i was dead last, but i completed it :).  Heck, I ran farther than some of the guys on my team which really made me happy.  Hehe, it’s so worth all this soreness.

So, CCK has put up a challenge to have bloggers post a picture of themselves sans make-up, and frankly, I have no problem with that:

I’m pretty sure I’m not wearing make-up in this photo because i just got done with my run and i went to Fashion Bug to do my truth video to some random stranger for Speech Class.  Either way I’m all messy hehe.

 
 
 
So i really don’t have any good recipes.  I’ve mainly been sticking with breakfast foods for breakfast and lunch.  I tried out a super plump pancake recipe, and it was divine :).
Well, I’m off.
Do you ever feel insecure without make-up?
If i have a good reason to not wear make-up (like I’m rushed or it’s just not an event to wear make-up) then i don’t, but if everyone else is wearing it and looking all nice and pretty, then yeah, i do lol.

Silly Computer…

So, the reason i haven’t been posting is because our computer was on the fritz, but now, it’s all better so I’m back on the blog :).  Boy, I’ve had such a busy week!  Firstly, on Wednesday night, my mouth started bleeding profusely because my stitches or something had popped.  I got hardly any sleep, and by 6 in the morning it still hadn’t stopped, so we went to the emergency room where i got some anti-biotics.  It’s all better now.  I think it was just a result of too much chex cereal.  I’ll be more careful next time 🙂

Also, during the weekend, I had to get some blood drawn, but i got starbucks afterward so it’s all good :).  Not to mention, I went a friend’s grad party, and her mom, who is gluten intolerant and dairy intolerant (she’s allergic to the protein and lactose intolerant), made a seperate cake for me and her that was gluten-free and vegan 🙂  That made my day lol.

Finally, I’ve decided to give up the whole gluten-free thing and just go gluten-low cuz my mom wasn’t really on board and frankly, i enjoy wheat too much lol.  So, hopefully, her and mine symptoms will resolve themselves.

During the week I made some delicious homemade veggie burgers 🙂  They were super super good.  Even my brother liked them!

Looks kind of funky, but tastes amazing 🙂

Ingredients:

– 1 and 1/2 cup of cooked pinto beans
– 1/2 cup of oatmeal
– 1/4 cup of hummus
– a dash of hot sauce (optional)
– any seasonings and peppers that you so wish 🙂
Steps:
1. Mash the beans with the oatmeal and hummus
2. Mix in the hot sauce and peppers.
3. Heat up a frying pan with some olive oil, and fry these puppies up.
4. Takes about 4 minutes for each to cook. Flip them every minute or so.
5. *the most important part!* Enjoy  😀

Yum! Chexy no-bake cookies :)

Hello there 🙂

I hope everyone’s having a great summer.  I am so far.  Well, besides having to go to the doctor’s office, but it’s no biggy.  Just to see what’s up with my period lol.  Apparently on Saturday, I have to get some blood work done, and then on Sunday, I have to get an ultrasound to make sure that i don’t have Polycystic Syndrome or something like that.  Apparently, on that day, i have to drink 32 oz of water and hold it until they’re done.  Wow.  That’s gonna be fun… NOT.

Oh well, today was fun.  I went out running, and recently, i thought i might be getting shin splints but i didn’t have much pain running today so maybe not :).  Then, I drank a big protein shake with an orange, some peanut butter, and a leftover blondie.  Very good :).

Now, though, i’m waiting for my no-bake cookies to harden in the freezer :).

With chex cereal!

These are definately good!  AND with less sugar so i guess their healthy 🙂  All i know is that i was definately craving some no-bakes and these puppies hit the spot.

Ingredients:
–1/3 cup of organic, brown sugar
–1/4 cup of non-dairy milk (i used coconut!)
–1/2 cup of peanut butter
— 1 and 1/2 cup of chex cereal
— 1/2 teaspoon of vanilla
1. On the stove bring the milk and the milk to a boil while stirring constantly.
2. Remove from the heat and mix in the peanut butter, chex and vanilla.
3. Dob spoonfuls of the mix onto a cookie sheet or something like that.
4. Place in freezer and wait for them to harden 🙂
… or just eat them as they are, i don’t care.
*makes approximately 10.*
 
Oh no! someone swiped one when i wasn’t looking! Oh wait, that was me 🙂

So, we got our air conditioning back yesterday and I’m super happy.  Air conditioning is probably the best invention ever right now 🙂

So I’m off the revel in my air conditioning and you had better be off making some no-bakes because right now, it is WAY to hot to be baking lol.
BTW, what’s your favorite cereal?
I don’t really know because it consistently changes hehe.

Busy weekend :)

Hello all 🙂

I had a super weekend.  Even though it started with getting my wisdom teeth pulled which was certainly NOT comfortable.  The bottom right one was the most painful, and it had three roots instead of two.  Not fun.  BUT it got better because we did some yard work at my dad’s house and had a cook out.  Also, I discovered that the roses we planted over my dog, Jackie’s grave were in full bloom and they looked absolutely gorgeous.

So so vibrant

I was so happy that they bloomed this year.  Last year at this time, they were all closed up and refused to bloom, but now, I’m pleased with the effort we put into them.  (I’m also happy they survived the winter).

 
 
 
 
 
 
 
Also, this weekend, I ended up getting a good quality protein powder from the grocery store which is sure to get my protein count up.
 
Great mixed with some almond milk 🙂

I’ve been adding this stuff to absolutely everything.  It’s sooo flexible 🙂  If that’s the right word…

Finally, yesterday, I went to the strawberry festival in our town with a couple of friends and ended up tasting the 7th hottest hot sauce in the world.  Hehe, my eyes were watering and i felt like i was on fire!  Thankfully, it went out when i shared a non-alcoholic margarita with a friend of mine.
Great great fun 🙂
Welp, I’m off to get some lunch ready.  I’m trying to develope a really great, easy veggie burger recipe but so far, it’s been hard 😦
I won’t give up though!
