Happy Memorial Day!

I just wanted to thank all of the veterans who have risked and gave their lives protecting our freedom.  I cannot even begin to imagine giving that great of a sacrifice. Thank you.

Unlike most Americans who are likely grilling today, my family stayed inside, surrounded by fans, eating pizza, and watching movies.  (not to mention i had to study for finals which are coming up tomorrow). 

From Dominos, my brother and mom ordered a philly cheese steak (yuck, even before i was vegan, i really hated it).  I however had a delicious cheeseless pacific veggie pizza.  Yum :). 

Also, before the impending heat wave threatened to suffocate me, i went out on a lovely 5-mile jog and on a new route too ;).  I really love new routes lol.

Early this weekend, on Saturday, I had a family outing with my older brother, my 5-year-old nephew, his mom, my younger brother, and my mom.  We went out to a farm, and my nephew got to enjoy the animals there.  He loved feeding the goats and petting this adorable, doe-eyed calf.

Shopping and… finals :(

So, only about five days left of school, and I’m getting pretty ansy (if you haven’t noticed).  For my speech final, i had to film myself going up to a complete stranger and giving them a speech.  I felt like a i did really bad, but hopefully my speech teacher won’t think so :).

Also, while i was out harrassing a worker at a local clothing store, i got a hold of some capris, a new running outfit, and a new wallet (i lost my old wallet as well as the permit that happened to be in it :(…

Soooo, I’m thinking for this weekend, some no-bakes for a new recipe.  But these are gonna be some, like, genuine no-bakes, not those odd ones i made before lol.
Totally looking forward to the summer, and hopefully, i can come up with some’s good milkshake recipes because, honestly, who doesn’t love milkshakes?
Huh, this kind of reminds me of a fergi song lol.

Tornadoes!

So just recently we had a tornado warning in our area and apparently there was an actual tornado.  It’s all good though, neither mine nor any of my friends or family were utterly destroyed 🙂

I hope.

So, the spanish party went well… I was the only one who remembered to bring something lol.   My spanish teacher made lechon– a kind of spanish pork thing– which was kind of random lol because it’s mid-morning that we’re having this party, like right before lunch ^^  Of course i didn’t want any, but i did help myself to some struedel bites that were “accidentally vegan” hehe, and i had two cookies and a cup of coffee, so guess who was super hyper for gym class??

Apparently, everyone really liked my cookies, someone even asked me how i made them? lol, just a simple shortbread recipe 😛

One of my “friends” though wouldn’t try any because she knew they were vegan, and apparently, to her, if you eat vegan, you always eat bad food. She’s not really much of a friend– always putting me down, nagging me (like my mother), and always teasing me about my diet etc.– but i want to be nice to her because i know that a lot of people don’t like her… I just want some distance.

Sorry to put my gossip on her (would that be considered gossip), but i had to get that off my chest…

Well, I’ve been eating a gluten-free lunch so far this week because i’ve started experiencing more stomachaches.  I really hope this is just from too many beans or peanut butter or something because i really like Subway lol.

If anyone out who is gluten intolerant/sensitive can clue me in or something that would be mucho appreciated 🙂

Also, do you have a friend who gets under your skin, but you don’t want to hurt them by making some distance?

Polvorones!!

So, school’s gonna be out soon.  Just one more week and two, weird floating days in the middle of the week (we get Memorial Day off).  And tomorrow, we’re gonna have una fiesta en la clase de espanol! That’s a party in Spanish class for all you who took/are taking French ;).

In honor of this party i made polvorones which mean dust cookies (i think) in Spanish.  They’re super fragile, but delish.  Instead of putting powdered sugar all over them, i put cinnamon sugar all over them because, alas, we don’t have any powdered sugar. Sad, i know.

Polvorones:
 
— 1 cup of coconut oil (a whole lotta saturated fat ;))
— 2/3 cup of sugar
— 1 teaspoon of vanilla extract
— 1 and 1/2 cup of flour ( i used whole wheat)
— 1/2 teaspoon of salt
— 1 teaspoon of cinnamon (divided)
— another 1/3 cup of sugar
— 1/4 cup of vegan chocolate chips *i used chocolate chunks ;)*
 
Steps:
1. You know the drill. Preheat oven to 350 degrees F and grease a cookie pan.
2. Mix the oil and sugar and slowly add the vanilla.
3. In a separate bowl, mix the flour, salt, and 1/2 teaspoon of cinnamon.
4. Slowly add in the dry flour into the wet ingrediants until a stiff dough is formed.  Then, fold in the chocolate.
5. Mix the 1/3 cup of sugar with 1/2 teaspoon of cinnamon.
6. Finally, roll the dough into little balls and roll the balls in the cinnamon sugar.
7. Bake for 15-20 minutes and enjoy 🙂
 
I quite like them, though they are very VERY fragile.  Hence the name being drived from polvo (dust).  If you want, you can try a gluten-free flour, but idk about the results.  I would like to know about that because me and my mom are going gluten free for two weeks this summer to see if it helps our digestive woes, her skin issues, and my– erm– monthly problems.  My mom thinks that gluten is the problem, so hey, why not give it a try.  We may be gluten sensitive :).  So i’ll post some coolio gluten-free recipes.
Well, some nice cool tea is calling my name as well as the cool side of the pillow (it’s like 80 degrees now).

Super happy fun day :)

I’ve been looking forward to today all this week because i’d be running with the little running group after school, and today, we ran to the park and played frisbee golf and played on the play area like little kids :). 

So so much fun 🙂

So a coolio post that i thought i might post today is called

Tips for those who think that veganism is too hard–

or Vegan Tips 🙂

First a note: When i first thought about becoming vegan, i was like, That would be too hard– no more ice cream! And then, i discovered coconut milk ice cream and i was like, okay I’m good 🙂  Also, if you aren’t a vegan, keep these in mind because maybe you might run into a vegan and then you would know what to feed them 🙂

Also, I’m not trying to push veganism on people.  Everybody has a different way of eating that works best for them, and veganism isn’t for everybody.  I know this, and what’s important is that you remember to live compassionately in your life 🙂

Okay:

Tip number one: I think i’ll start by e

ating out.  When one eats out, one must remember that there is always something on the menu you can eat.  Some of the best restaurants to eat out at are Mexican restaurants because most of them have a vegetarian section and i can guarantee you that one of those meals are vegan :).  If you aren’t eating at a Mexican restaurant, and there aren’t any vegan meal choices, then look at the sides.  Usually, if you tell the waiter/waitress about your situation, they’ll be accommodating.

Tip number two: So let’s say that your craving something non-vegan, like ice cream or cookies.  Do not ignore this craving.  Feed it 🙂  If you aren’t concerned with soy, go with some faux meats if you want meat.  If you want ice cream, go with the coconut stuff, it’s pretty good, but wait, it’s super expensive, what are you going to do?  I know! How about something homemade?  Just go to google and push in “vegan ____” (You’re supposed to fill the blank with whatever you want), and make it! Keep searching, don’t go with the first recipe you find.  Shop around a bit 😉  (There are also plenty of other faux vegan stuff on the market.  I found donuts once).

Tip number three: Parties!
So let’s say you’re going to a sleepover, party, whatev.  what are you going to do???  I have an idea!  Let’s make something vegan for everyone to enjoy.  Like cookies!  Or brownies! or, dare i say, blondies!  What about a family thanksgiving get together?  Let’s be interesting a bring a trade-mark vegan dish like veggie burgers.  (What? I like my veggie burgers and people tease about it lol).  Or you can bring a cassarolle (sp?) that’s cool, too.  Just explain your diet, why you’re into it, and let an interesting conversation ensue.  If someone ridicules you about it, cry, and make the other person feel bad (lol, you don’t have to, but that’s what i would do hehe). 
Speaking of crying: one time during a Government test at school, i forgot my notecard that the teacher let us have to cheat off of and i wasn’t getting any of the answers, so i started to cry, and i was about to hold it in, when i thought: what IF i started bauling in the middle of class?  So, i started bawling, and the teacher let me use my friends notecard :).  This MIGHT not work with guys lol ^^
 
Okay, that’s all i can think of.  Just remember to include plenty of fats, protein, carbs, calcium, iron, and all that other good stuff in your diet, and make sure that you indulge once in a while because why torture yourself with bad food ??

Two weeks until summer :)

I’ve been so impatient lately for school to get out!  It doesn’t help that Ohio certainly isn’t giving us summery-type weather.  For example, today’s high was 56 degrees with heavy rain throughout early afternoon.  NOT summery 😦

Sorry I haven’t been blogging lately for all you who are interested.  I’ve been sort of depressed and tired lately because i have to take these progesterone pills to help regulate– erm– certain cycles, and all it does is make me cry at the littlest things.  Running helps with that though.  Yesterday i was super sore so i took a day off, but today, i felt fantastic running.  It really helped me take my mind off of how sad these pills make me.

Thankfully, though, this is the last time I’ll be taking them, because, this time, I’m going to try something herbal, like Maca Powder.  I think that that’ll help.

So, on to more important matters, like chocolate chip cookies.  I picked up some chocolate chunks for them… so their chocolate chunk cookies, and i love basing my recipes off of the Happy Vegan Chocolate Chip cookie recipe.  Heck, I showed this recipe to a friend of mine, and now, her whole family’s obsessed with it 🙂

So, i think I’m going to modify the recipe slightly by including some nuts or pumpkin spice.  What do you think?  Does anybody who might come across here know of anything yummy they put in cookies??

I’ll be sure to post the recipe later 😉 and I’ll probably post more during the summer when i have more time 🙂

5k results :)

So, the 5k went really well.  I had a lot of fun with my friends and a couple of my teachers.  My cross country coach was there as well.  Hehe, he was waaaay ahead of  me during the run, but i held my own with a time of 28:17.  Last year, during my first five k, i got like a 30:20 so I’m getting better, but i still didn’t beat my PR which was 26:11.  So, i  have a long way to go.  My goal is 23:00 or something like that.

Also, I got a medal for being the second place overall female 🙂  that was special.  I would’ve gotten first but this chick passed me up in the last mile.  Oh well, may the fastest runner win :).

I had sooo much fun, and I’m super proud of myself for getting such a good time.  As a reward (and because i was planning on going anyway regardless of my time), i went to starbucks and filled myself with caffeine and sugar in the form of a mocha frappuccino.

I got super hyper then and played around with my dogs and by afternoon, i was ravenous, so i made myself an early dinner that consisted of chili beans, walnut salad, and a grilled “cheese”.  That faux cheese is something i cannot stay away from.  I’m literally addicted to making faux grilled cheese sandwiches whenever the opportunity arrives.
Tomorrow, for breakfast, I plan on making some Chocolate-covered Katie’s doughnuts.  If i don’t have time–since i have church in the morning– i think I’ll have it for dinner alongside peanutbutter or something delicious like that 🙂
One of the many perks of being a vegan is that i can eat all the peanut butter in the house and use the excuse: but it’s for protein 😉
lol, it’s already been about half a week since we bought our jar of pb and i’ve already used up half of it.  Well, i guess that makes since.  Half a week, half the jar, but still, i’m surprised at how far it’s been depleted.
welp, i’m off to go do something quiet and relaxing like reading, or maybe play some violent video games.  Either way, tomorrow, i’ll be brainstorming some ideas for chocolate chip cookies for the sleepover i’m going to on friday.
Do you enjoy peanut butter?  There’s this guy on my cross country team who hates peanut butter.  Poor individual, never able to experience the joy that can truly come from peanut butter

It’s sooo hot!!!

And I’m not just talking about my body 😉  (naw, jk jk let’s not be egotistical now.)

The temperature has reached over eighty and the humidity is off the charts!  And to top it all off, our heater broke :(, but we’re praying that it miraculously turns back on because sometimes I think God answers my prayers that way ;).

For the past two days, I’ve been having dry cereal mixed with nuts and chocolate with my lunch (along with lentils and fresh veggies and fruit of course) because there was hardly anything good to eat in the house.  We were out of peanut butter!  I know, it was aweful, but I survived, and i’m blogging about the story.  However, cereal mixed with cashews and fruit and almond milk were my go-to breakfasts before cross country meets because they were so easy for me to digest and it wasn’t overly bulky. 

You should really try it,  it’s soo good 🙂

Also, I turned in my application form for the Act Out Talent Studio, and I’m really hoping that I’ll be able to take some acting and modeling classes, because that would be a dream come true– to enter the acting and modeling biz.

Finally, after school I went out running with some friends which was nice but intense at the same time.  It was roasting for one thing, but it was nice to be in good company sharing some good laughs.  It got me excited for cross country camp this summer– I’ve never been, but I’ve heard some really good tales.

Next week, I’ll share some recipes for some delightful cookies that may or may not feature a peanut butter and chocolate combo ;).

5k coming up :)

So, after the play, there’s always the traditional Culver’s party which takes place at a restaurant.  Everytime, I hear how crazy awesome it is, but every year, i never get to go 😦  BUT next year I’ll be driving so hopefully i wont have to rely on sleepy parents.

Also, this saturday, I’m gonna be competing in a 5 K at my school, and I’m getting a little nervous, but I’ll try my best and hopefully I’ll get under 30 minutes.   My shins are hurting a bit, so I’m gonna try EVERYTHING to prevent shin splints because i dont want to enter cross country season with debilitating shin splints.

Also, as promised, here’s a picture of me as a maid 🙂 (my role in the play).

Anywho, this weekend, i’ll definately have to update my recipe page because i’m really getting behind.
Speaking of recipes, I need to start working in more protein in my diet.  I’ve always been a bit concerned with protein, but I’ve never had a real problem with it.  It’s always fun to try to incorporate it with goodies like peanut butter and homemade veggie burgers (as well as Boca veggie burgers :)).

What do I want to be when i grow up…

So, lately, ever since a spokesperson from Acting Out Talent Studio came to talk to the cast of the musical I was in, I’ve been thinking about getting into the performing arts.  Everytime I take the PSAT or Practice test or whatever it’s called, I always end up getting performing arts as one of my top career choices.  So, maybe over the summer I’ll visit the studio.

My top choice would either be acting or modeling (my mom modeled for JC Penny’s before and she said she loved it :)).  Lol, the only reason I’m really in the play is to be on stage, in make-up, and in costume.   It’s really so much fun as well as the photoshoot 🙂

Anywho, going on.  Today’s run was super fun.  It was just four of us, but we managed to have fun.  We ran around four miles and right now, I am as sore as ever!  Did i mention how much I love and miss this feeling?  The feeling of comradery and soreness 🙂  This is why I love cross country so much.  It just makes me feel like I belong.
