Pumpkin in July <3

Sorry i haven’t been posting much.  I’ve been pretty scattered-brained these past few days.  My calves are no longer sore which is good, and in one week, I’ll be heading off to cross country camp 🙂 YAY! 

So yesterday, I went for a five mile run and did two of those miles as intervals.  Man, I was exhausted afterwards!  I slept like a rock last night lol.  It was hard.  My coach wants me to get faster so he told me to do interval training twice a week.  I hope that i do get faster because this is my senior year coming up and i really want to get at least a 24 or better in a meet.

This morning for breakfast i used some canned pumpkin to make pumpkin pie oatmeal and i would post the pic except wordpress isn’t cooperating with me today 😦

Some intense miles the other day… and some intense eats :)

So, i am sooo sore from Tuesday’s run.  My friend and I decided to do around three miles of our six mile run barefoot which felt so good considering it was super hot, but i didn’t realize how much running barefoot works out your calfs lol!  Oh well, the more sore i am, i’m hoping the more muscle i build and the more muscle i build, the faster i become!   … Hopefully.

So the buckwheat flour tastes a little funny but it’s pretty good so long as you get used to it.

I used it to make some pretty good pancakes yesterday for lunch.  I put a tiny bit of coffee just to give it that kick that i wanted.

Heres the recipe (they pretty much look like all the other pancakes i make except darker):
–1/4 cup of buckwheat flour

–1/3 cup of non-dairy milk

–1/4 teaspoon of instant coffee

–1/4 teaspoon of baking powder

–some sweetner such as stevia or sugar (to taste).

1. Heat up your pan to about medium, medium-low with some oil on it.

2. Mix up your ingredients.

3. Pour some of the batter onto the skillet or pan.

4. Flip em when bubbles begin forming on the top.

5. Enjoy, of course!

*Makes two decent sized pancakes 🙂 and you can also make more if you so desire.

Also yesterday I made some delicious muffins that I like, but my brother says they have a funky aftertaste.  Must be the buckwheat.  It tastes totally different than regular wheat, and I will definately have to experiement with it :).

Welp, today, i have to run with my team again and i certainly look forward to it.  Also, in about a week and a half I’ll be getting ready to go to Cross Country Camp– the most brutal week of the summer (I’m sooo excited!!) Plus, it’s super fun since we go swimming and play lots of games as well as running like 13+miles in one day.  The farthest I’ve ever run is 7 miles, but i think I can do more if i put my mind to it :).

So… what should I make??

I just got some buckwheat flour, and I’m trying to think of what to make…

I also got some super dark chocolate which really cheered me up after having my bike malfunction on me when i was going home from the store.  Not fun at all lol. 

I’m thinking of making some pancakes before i go out running with my cross country team.  Pancakes and running always mix well with me as well as peanut butter and running.

I’m kind of all over the place today.  I keep telling myself that I’ll apply to more colleges or something productive over the summer, but it just never works out lol.  I’m pretty lazy that way.

Well, I’ll definately let you all know how my pancakes will go.  In the mean time, I’ll talk about running.

Recently, my whole team has practically been outrunning me, so yesterday, I picked up the speed a little bit (right around a 9 min mile pace), and I did die!  I don’t know about you, but whenever I try to pick up the pace in running, I’m always afraid that my endurance will give out, so maybe I’ll just run really fast and not worry about endurance because, i mean, i can always slow down if i feel like dying, right?

Today, I imagine that we’ll be doing a fountain run which is going to the fountain in this one business by the bike path since its so hot.  There’s a heat advisory today, but i think I’ll be okay since we run closer to evening than afternoon and the heat advisory is supposed to end by this afternoon.

Well, that’s pretty much it.  I’ll post a gluten-free pancake recipe tomorrow and probably revise my recipes page.

I really haven’t fallen off the face of the earth…or died

So, my dad had this past week off, so i was over at his house, and unfortunately, his computer got stolen.  We’re not sure who did it.  That’s why i haven’t been posting XP.  Oh well, my dad functions without a computer, and he typically keeps everything on file anyway.  He’s so organized that way :).

So, this past week, I attempted to make strawberry shortcake, but a little girl in our neighborhood ate all of our strawberries when we had a bonfire.  I think it went to a worthy cause lol.  Instead i made pineapple shortcake which turned out fab, but the best part was the whipped cream :P.  Here’s a picture of it on pancakes:

Ingredients:

3/4 cup of non dairy milk
1/4 cup of flour
3/4 cup of non dairy butter (i used earth balance whipped :P)
1 cup of powdered sugar
1. In a sauce pan, mix the milk and flour together and put on medium-low until keep stirring until it becomes very thick.
2. Place it in the fridge and chill completely.
3. Then, mix the butter and powdered sugar thoroughly and add in the milk/flour mixture.
4. Keep stirring and stirring, but make sure to not over work it. 
5. Put it in the fridge until it’s ready to be eaten.
A little runny, but it’s soooo good on pancakes and other goodies.  You may even wanna put it on cookies or something.
So this morning, i went on a lovely six miler with some friends and i was sooo slow.  Idk, i feel good, I’m just slllooowww.  I try really hard, but i guess it’s because I’m short or something.  I don’t know.  I’ll get faster maybe.

Failed Empanadas (sp?)

Yesterday, my mom put me in charge of dinner, so i decided to make something exotic and complicated: empenadas.  Well, okay, they aren’t that complicated, but it was certainly something new.  The first batter came out too running since i accidentally added too much water and I had accidentally stuffed the second batter too much with the filling so there were random pieces of broccoli and mushrooms sticking out once the little things managed to bake.  Regardless, i need practice making savory items.

I have cross country conditioning today, and i really hope that it’s not a difficult run like yesterday’s.  My shins have been feeling better, though, i’m still worried about having to take a week off.  After all, i really want to get 300 miles in this summer.

Oh well, the season’s more important than summer training anyway.

Do you/did you play a sport in high school/college??

I certainly never thought i would considering i have no hand-eye coordination, but running turned out to be something really positive in my life because of great teammates and encouragement from my family members.

Protein muffins

Ugh, my shins have been hurting me and it’s really frustrating because every single time I start running, shin splints attack! Grrrr…. So I took an extra day off, but after running pretty fast (lol to me) yesterday, my shins were bothering me today on my run. Also, my ankles were kinda sore, so idk what that was about.

But once i got in, i had some delicious, ginormous muffins to look forward to that would provide me with a whopping 10 grams of protein 🙂 not to mention, the peanut butter i put on them would add a bit extra protein as well so for breakfast i got close to 20 or so grams of protein.  And who says that vegans don’t get protein 😉

just imagine dark chocolate peanut butter on top 😛

Ingredients:

–1 cup of green tea with a bit of stevia in it (or sugar)
–2 cups of whole wheat flour
— 6 Tablespoons of protein powder (or sub flour)
–1/4 cup of sugar
–2 teaspoons of baking powder
— 1 banana
–1 tablespoon of oil
–1 teaspoon of stevia
–2 tablespoons (or more) of chocolate chips
Steps:
1. Brew your green tea and preheat the oven to 375 degrees F.
2. Mix the dry ingredients, besides the chocolate chips, and then, in a separate bowl, mix the wet.
3. Mix the dry and wet ingredients together and then fold in the chocolate chips.  Add water to the mixture as needed (start off with less and then add more).
4. Fill up your muffin liners and bake for 25 minutes or until you can stick a toothpick in it and it comes out dry.
*makes six big muffins or 12 mini muffins 🙂
I’ve eaten these twice in a row for breakfast– once with banana and peanut butter and then another time with cashews ❤
There will definitely be more muffin recipes to come 😀 because I’m currently obsessed with muffins, but tomorrow, i think I’ll post something savory.

Muffins Galore :)

Sorry i haven’t been posting much. My computer doesn’t really like me and often times it’s difficult to post certain material.  *sigh*

My brother’s in Philadelphia right now on a mission trip through our church and so I’m left here all alone at home 😦 (Well, it’s not so bad…). Therefore, to let up on some boredom, I made muffins which I’m currently obsessed with :).  Also, later I plan to roast up some chickpeas which i hear are very good :P.

lol, these are so tiny!

Here’s one of the recipes:

Ingrediants:
— 2 cups of flour
—  3 teaspoons of baking powder
— 1/2 teaspoon of salt
— 3/4 cup of chocolate chips
— 1/3 cup of sugar
— 3/4 cup of non-dairy milk
— 1/3 cup of oil
— 1 teaspoon of vanilla extract
— 1 teaspoon of stevia extract
— 1 flax egg (1 tablespoon of ground flaxseeds mixed with three tablespoons of water).
 
Steps:
1. Preheat oven to 400 degrees F.
2. Mix the dry ingredients.
3 Mix the wet ingredients
4. Combine the wet and dry ingredients.
5. Fill muffin liners with the dough and bake in the oven for around 20 minutes.
*Makes 12 mini-muffins or 6 large ones 🙂
So, I was super proud of myself today because I ran five miles in around 45 minutes.  Hehe, that’s pretty fast for me, but I’m taking a day off on Friday because I feel those terrible shin splints coming on and I do not want to get them before cross country season even starts!
Tomorrow be prepared for another muffin recipe but this one is even better!
Also, if you don’t have stevia, just up the amount of sugar to about 1/2 cup 🙂 — unless of course you like less-sweet muffins.

I have not fallen off the face of the earth

I’ve just been tired, and it has come to my attention that my crepe recipe did not show up on the blog.  I apologize.

Here it is:

Ingredients:

–1/4 cup of flour

–3 tablespoons of brown rice protein powder ( or any other)

–1/2 cup of non-dairy milk

— Some sweetner if desired

Steps:

1. Heat some oil on a pan

2. Mix the dry ingredients and then incorporate the wet.

3. Pour some batter onto the pan and let it cook it on medium-low until the top is evenly golden brown and dry.

4. Enjoy 🙂

*Makes about 3

So, this morning I went with a local running group to go out running.  My coach was there and so was a friend of mine who had recently graduated.  It was a hard five miles because i only got like four hours of sleep (everyone knows you need to run as many miles as the hours you slept (jk)).  I was super paranoid last night after watching paranormal activity 2.  Nearly gave me a heart attack and it really disturbed me, but nothing a little coffee couldn’t fix.  My friend and I went to a coffee shop after our run and picked up an ultra decadent frappuccino 😛

Also, this week, I made another batch of muffins (this time chocolate chip 🙂

I’ll post this little recipe tomorrow 😉

Yummy crepes! :P

So, I woke up this morning craving pancakes, so i got up and began making them and so on and so forth when i realized I only had a tinsy bit of baking powder left that i wanted to save for other baking creations.  So i thought: now would be a good time to experiment with a crepe recipe!
