So, I’ve been ultra busy these past couple of weeks.  you know, with the play being in a week and all.  Tomorrow I have an all-day practice thing, with full costume and everything so i hope that i can get a good snapshot of my maid outfit because it is adorable 🙂

I loved prom, it was so much fun, and I’m super glad that all of my friends posted these pics on facebook.
The play is almost over with, i can feel it, and I had the day off from practice today so i went out for a fun adventure run, and I ended up in some weird driveway/trail.  I turned around bunches, but thankfully, i found my way back home :).  It was fun, and i hardly felt tired afterward… until i sat down lol.
I’m gonna mentally prepare myself now for a whole day’s worth of play practice… There’s no way to really be totally prepared for the exhaustion afterwards….

Happy Easter!!

I genuinely enjoy easter now, because now, I know what it’s really about–rather than the candy– Jesus ^^

I wanted to go to church, but it was my dad’s turn to have me over for the weekend, and he’s not much of a church-goer.  So, we ended up going to Bob Evans. o well, there’s always next year.

I feel like such an adult now that I’m not solely focused on the candy 🙂

I’ve been feeling sick all this weekend and I had no idea why until my mom told me that the painkillers i was taking were probably the culprit.  You see, this Friday, i had to get oral surgery to get my wisdom teeth removed, and unfortunately, one of my wisdom teeth was covered with tissue and the dentist had to cut open my mouth.  Not fun lol.

But i was brave and it was over before i knew it 🙂

And as celebration, i had a lot of smoothies and other such soft food.

What i consider a soft food:

this, my dear friends, is a high-protein stir fry rice 🙂

What you do is:

Make a serving of rice

and then, in a pan with some oil add:

— a bell pepper

–some tomato

–lots of tumeric

–bit of hot sauce

–some oregano

–a bit of soy sauce

–some vegan sausages (i used Yves), but you can really use anything such as tofu, beans, seitan, or tempeh.

Fry it up and serve.  It’s the bomb 😉

Another thing I made today, consider it’s Easter, is:

Carrot cake 🙂

(well, it’s more bready than cakey but you get the picture ;))

This is loosely based off of the recipe I found on CCK’s website

–2 and 1/4 cup of whole wheat flour

–1 Tablespoon of baking powder

–1 teaspoon of salt

–dash of vanilla

–close to a tablespoon of stevia extract (EDIT: You could probably add like 1/3 cup of sugar or so depending on your taste.)

–2/3 cup of olive oil

–2 cups of grated carrot

–1 cup of vanilla almond milk

–a dash of apple cider vinegar


1. Preheat the oven to 350 F

2. Mix all of the ingrediants.

3. Then, in a pie pan or a cake pan, pour the batter into it (make sure you grease the pan).

4. Bake for 30-40 minutes.

Then end 🙂

Wait, no, we need a frosting.

What i frosted this healthful cake with is:

Peanut Butter and banana all mashed up together:

1/4 cup of peanut butter to 1 banana

mash this up very well and spear onto the cake.

Voila! a healthful cake for breakfast tomorrow 🙂

Running tips :)

There's a winner

 maybe I’m not the best person, per se to be giving running tips since I’ve only be running long distances for about a year and a half, but I think that I can give a few good pointers 😉

Tip numero uno: Don’t put too much pressure on yourself. 

Have fun!  Think about it: Why would you do something that you don’t have fun with?  Instead of thinking about how painful it is, think of all of the fun adventures you’ll have.  Like when you run outside, imagine that you’re a superhero or look at all the houses or appreciate the birds.  Don’t focus on this is painful, i want to give up, i have to get this time etc. etc.  Focus on having fun 🙂

Tip numero dos: Start slow

Don’t go five miles when you’re a first-timer.  Start by running maybe a half of a mile and go from there, but keep in mind:  Don’t increase your mileage by more than 10 percent per week.  If you do that, you’ll risk injury such as shin splints and stress fractures.  When i was in cross country this past fall, i got terrible shin splints because i got over competitive.  Don’t get over competitive: remember tip number one.

Tip numero tres: Remember to fuel up with the right stuff

Bananas help you to prevent those pesky cramps, and complex carbs give you the energy you need to go mega miles.  Also, make sure that you get enough calories and protein.  If you don’t get enough of that, you’re performance with plummet quickly.  If you’re trying to lose weight, then running’s fantastic, but keep in mind that you need to use your calories right with the right amount of complex carbs, protein and fat– yes, i said it, fat.

Tip numero cuatro: Remember that rest days are your friend

Don’t over do it.  What i do is run the weekdays and take the weekends off.  If I’m having an off day on one of the weekdays, then I’ll make that my rest day and run on saturday or something.  Just make sure that you take your rest day and enjoy it because recovery is just as important as training.

Tip numero cinco: How to breath right

Okay, i think we all know how to breath, but in running, your breathing may become labored (just a hunch), so to prevent that, you should breath from your tummy and not from your chest.  Your diaphragm– where your tummy is– goes down and out when you breath in, making room for your lungs to expand more.  The more your lungs expand, the more oxygen for your brain and muscles 🙂  Also, keep your arms at your hips and RELAX– don’t become too intense with running because it’ll make the activity that much harder.

That’s it.  I couldn’t think of anymore.  Happy running, and be sure to sign up for as many races as you can/want.  It’ll get you aquainted with people who share similar interests. Also, joining running clubs will help, too.

It’s been a while!

So Prom went really well!  i ended up staying up until 6 am!  That’s the longest i’ve ever stayed awake lol.  I was exhausted and hungry so i made myself some kettlecorn in the microwave and a delicious pear and went straight to bed, and i ended up waking up again at ten o’clock.  Just in time to see saturday morning cartoons!

We went to a country club for prom and it was really fancy.  I didn’t know they were serving dinner so i ate before i went, but they were serving chicken parmesian so it was a good thing that i ate beforehand! Also, they had a free cafe with chai and soymilk so i had a ball as well as plenty of dancing 🙂

Apparently a couple of guys didn’t have dates so i ended up hanging around them.  One in particular 😉  And afterwards, we went to dave and buster’s until about four or five am and that was sooo much fun!

Also, this week, that i forgot to mention (oops), i came up with a delicious concoction that i would like to share with you!

Feast your eyes on

Reeses Cup Oatmeal!

The ingrediants are:

–1 serving of cooked oatmeal (preferably made with almondmilk instead of water, but depends on your taste)

–A spoonful of peanut butter

–1 serving of that chocolate sauce


1. Cook oatmeal like instructions on your cylindrical container says– or however you want.

2. Take a tablespoon of cocoa powder and mix it with a tablespoon of shortening and some sweetner.

3. Mix a spoonful of peanut butter, some of that chocolate sauce and some oatmeal in a big bowl and savor the delicious chocolatey peanut buttery mess ( could also sub any nut butter).

So yeah, that was delicious and I’ll be sure to put it up in my meesly recipe page.

Also, tonight, I competed in an air band contest at my church youth group.  What is an air band contest you ask?  It’s where a group of people choose a song and do some choriography with it.  It’s really quite simple.

My group decided on “I’ll make a man out of you” from Mulan.  It went awesomely well even though we didn’t win 😦  But that’s okay, the winner got a fifty dollar visa card, and we were gonna use it to go to Chipotle.  We’re probably just gonna go anyway 🙂

finally got to post something :)

Well, it’s been crazy lately. I have a paper due Tuesday, and I haven’t even finished the second contention!  Oh well, I’ll get on that tomorrow ;).  The photoshoot went really well.  I didn’t get a chance to snap a shot of my adorable maid outfit, but hopefully, I’ll be able to post that later.

Ugh, the 5:30 jogs are starting to irk me slightly.  I love running, but i hate getting up early 😦  I really don’t want to be in the musical next year because frankly, I’ve been in it for years and never got a lead role so maybe it’s not for me. 

Anywho, a recipe i have! 

This one is really good 😛

What should I call this? Chocolate chip oatcake... thingy??

Yummy ingredients include:

— 1/3 cup of oatmeal

–1/2 of a banana

–a little handful of chocolate chips

— Some sweetner if you so choose

–Also maybe try to add some vanilla (I used vanilla flavored sweetner so i didn’t add any vanilla, but you may want to).


1. Mash the banana into the oats in a coffee mug.

2. Mix in the rest of the ingredients and pop in the microwave for around two minutes.

3. Enjoy 😀

This is so easy, and I’ll definately have to come up with new flavors.  I’ve already had this with my breakfast and as a snack!  Other things that i have had for breakfast include:

1. “milkshakes” (just a frozen banana with a bit of almond milk)

2. Reese’s cup oatmeal 😛  (I’ll definately have to add this to my recipes)

3. Pancakes (of course!).

Lately I’ve been craving bready stuff (like most days), and I hate it when my mom makes those low-carb dinners/meals because i’m one of those people who needs those carbs!  When I was eating low-carb dinners (because my mom was on that low-carb craze), I didn’t exactly have the highest energy.  Not fun 😦  But now, i make sure to get enough carbs otherwise i get those blood sugar crashes, and trust me, no one wants to see me carb-deprived hehe. 

Well, prom is tomorrow, and i was feeling a bit down today about not having a date and all.  I’ve actually never been on a date before, and I’m a junior in high school.  It sort of makes me sad because all of my friends have been on dates and things like that, and it makes me think that something’s wrong with me.  There’s probably nothing wrong with me, but still…

Oh well, I’ll find the one someday 🙂

Crazy Schedule Coming up!!

The play.  It’s been picking up speed and the photoshoot is tomorrow.  I’ll be sure to post my maid outfit if i take a picture of it.  In a couple of weeks we’ll be staying at school anywhere from six to nine at night.  Not fun, but it’ll be worth it once openning night comes around.  The play is always fun during the performance days.  The practices are gruelling though and it always cuts into my running.  I’m trying to bring up my mileage to five miles per day because if i run 300 miles over the summer, my coach will buy me a new pair of running shoes.  Plus, if i get that mileage, getting a nice 25 or 24 minute 5K will be a breeze 🙂  Hopefully.

Also, tomorrow, i have to eat dinner at school so i packed myself some faux meat.   I really only use faux meat when i’m in a time crunch and don’t know what else to bring in terms of protein.

If it’s good, I’ll post the recipe on Wed.  I don’t think I’ll get around to blogging tomorrow seeing as I’ll be at school for thirteen hours straight.  No sane person should stay at school that long.  It’s unhealthy, but alas, I must.  Maybe next year I’ll skip out on the play and do something like track.  I loved doing the 800 meter run in eighth grade.  I felt so accomplished ^^ since the first time i ran i drank caffeinated water (yeah, weird, i know lol) and was really hyper and ran really fast, but by the second lap i was crying because i thought i was coming in last.  Some guys on my track team encouraged me though and i sprinted towards the finish line, and guess what?  i wasn’t last ^^ that felt good.

So, what do you think of faux meat and soy in general?  I think it’s fine in moderation– like most things.  If you eat too much broccoli you’ll get excessive gas, too many nuts digestive issues, and too many beans… well that’s the same as the broccoli hehe.

Mmm… Tempeh and Carrot Cake <3

Today was absolutely gorgeous :).  It was close to eighty with sunny skies galore.  I loved it, but i was also sort of cranky cuz i didn’t get enough sleep last night.  One of my greatest frustrations is not being able to sleep.  My mom has trouble sleeping, my brother has trouble sleeping, and so does my dad– as well as myself.  I don’t know why.  Usually it’s just cause i can’t shut my eyes or i just can’t fall all the way asleep 😦  It sucks but usually, i just suck it up for the next day and rest from running. 

Oh well, tempeh cheered me up for today.  I just tried it like a week ago and fell in love with it!  It’s nutty and good 😛  The best way to have it is with rice and cooked cabbage and various other greens which is precisely what i had for dinner tonight.  I didn’t take a picture because all i wanted to do is sprinkle some hot sauce on it and devour it.

Also, for lunch tomorrow (i pack my lunch the night before so i have time to get ready for the morning), i made a carrot cake muffin in order to use up some carrots.  My family gets organic produce from a farm nearby and they always send us an abundance of carrots that we inevitably forget to eat lol.

I may just make a whole carrot cake for some nice fuel before a run.

Speaking of amazing products:

Clif bars.

I used to eat the Luna bars, but i found that they were a bit light for me.  I prefer the denser stuff.  The Clif bar Carrot Cake flavor really got me in the mood for carrot cake so I’m gonna be baking up a storm soon 😀

Alright, now away from all those mouthwatering products.  I finally got some fishnets for the play.  Fishnets?  For a play?  What’s your role?!  Hehe, I’m supposed to be a maid for some rich lady and the director wants me in a short skirt and fishnets so i had to look all over town for fishnets– not to mention finding them in my size.  My mom suggested that we look for a pair in the kids’ sizes, and i was kind of embarrassed that we had to look.  Yes, i still fit into kid sizes, but am i happy about it?  not really…  I’m like five foot one and kind of tiny, but i’ve always hoped that i would get taller through some miracle.  Though my hopes running dry because my mom’s five two and my dad’s five ten. 

Oh well, it’s all good though 🙂  At least i can wear heels and not be taller than my date.  Speaking of dates, prom is this friday!  I didn’t get a date, but i was planning on going with friends anyway.  At first i was sort of depressed that i didn’t get a date since a lot of my friends have dates, but whatcha gonna do?  After all, I don’t think my worth’s based on whether or not i get asked to prom.

Running and coffee– another great combination

Yesterday’s chapel went very well. My friend and I got our point across about the dire water situation in third world countries and now, we’ve started a change drive 🙂
So, I was watching tv today and I saw on one show they featured a vegan and they portrayed her as malnourished looking and nibbling on salad leaves. That kind of made me sad: I hate stereotypes and stigmas and such. Even my friends think that I can’t enjoy good food because I eat a plant-based diet.
But i’m definately not weak. I ran four miles this morning, can bench 68 percent of my body weight, and i’ve beaten many people (boys included) in arm wrestling competitions. Also, I make it a point to eat what I like at meals, not nasty stuff (like bean sprouts!). Daniel, from the Bible ate a plant-based diet and it said he outperformed his peers. So, yeah, stereotypes in nearly all forms tick me off.
Well, my rant is over. Now onto something I love:
Today, I was majorly craving peanut butter and chocolate. Let’s see: peanut butter… Check… Chocolate… Check. Now, how to combine them?
During my little sift through blogs, I came across a peanut butter cup granola recipe from but one problem: I didn’t have maple syrup :(. So, I tried it with banana, and it worked out perfectly 😀
Craving= taken care of.
Now on to something serious.
Cartoon network has seriously got to start playing my favorite show more. Want to know my favorite show…??

Homemade vegan mounds bar :D

Ever since going vegan, I’ve got to say, i truly missed moundbars.  I’m such a big fan of coconut.  Ever since the third grade during a tropical-themed party in music class, I’ve loved coconut, and pairing it with chocolate is just like the greatest invention ever :).  So what does a little vegan do when she can’t have her delicious mounds bar?  Makes her own of course!

Doesn't quite look like a mounds bar, but it's close enough, right?

Homemade mounds bar (makes one so you can easily double the recipe)
–1 Tablespoon of melted coconut oil
–1 Tablespoon of cocoa powder
–Some sweetner like stevia or sugar (i used like ten drops of that liquid stevia stuff)
–Two tablespoons of shredded unsweetened (or sweetened!) coconut
1. Make sure that you melt you coconut oil in the microwave or something before you mix it into the cocoa powder.  Once you mix in the coconut oil in the cocoa powder, add the sweetener.
2. In a tiny container, or a cupcake liner, put in half of the chocolate mixture into the container, and then, put in the coconut.  Cover the coconut with the rest of the chocolate mixture ^^
3. Freeze for a few hours until it gets hard, and then set it out to thaw.  You can keep it in the fridge or the counter.  Either way, it retains its shape.
I feel about a billion times better today!  But i have a lot of homework to catch up on.  And to top it all off, I’m speaking in my school’s chapel tomorrow along with a friend of mine!  I’m super nervous because I’ll be up in front of the entire junior high and high school!  I’m speaking on the water santitation and availability in third world countries, and we’re gonna raise money to help Living Water International, which is a Christian charity that specifically helps countries get clean, safe water.

Being sick isn’t fun :(

So yesterday, i tried some bean sprouts in my lunch, and they definately didn’t taste good XP, nor did they sit well with me.  After play practice i threw my guts up and then some.  I was not a happy camper. So, I stayed home today from school since i still feel a bit nausious.

But something good still came out of it.  Since throwing up everything in my stomach the night before, i was really hungry, but i didn’t want anything to make me more sick so i thought pancakes would be a good bet.  So, i made up a quick batch of pancakes and they came out like real pancakes!  I made them perfect this time!

I need to get better at taking pictures... hehe

These are officially my sick day pancakes– or just pancakes because you really don’t need to eat them when you’re sick ^^
The ingredients are:
— 1/2 cup of flour
–1/4 teaspoon of baking powder
–1/2 cup of vanilla almond milk
–1/4 teaspoon of apple cider vinegar
–stevia or sugar to taste
1. Start by heating up your pan on medium heat
2. Mix the flour and baking powder
3. In a separate bowl, mix the almond milk and the apple cider vinegar
4. Mix all of the ingrediants together and add in your sugar or stevia or whatever you want.  If you want you can put in blueberries, banana, or chocolate chips 🙂
5. Cook them like you would any other pancakes.  Pour in the batter and when the little bubbles come to the top, flip them.
-Makes about 2 pancakes
I thought they were pretty good, but i accidently cooked one side for too long (wasn’t paying attention) so it got a little burnt :(.  that’s okay.  I’ll do better next time. 
Also, later this week, i think i might make a variation on my no-bake cookies.  Like adding in chocolate chips or peanut butter :P.  I love peanut butter– best stuff on the planet… besides chocolate.  Also, I might actually add a tofu recipe.  Big fan of tofu right here.
What’s your favorite food?  i could never decide… All i know is that it’s definately NOT bean sprouts.  Yuck.
