Father’s Day!

Happy Father’s Day Everyone!

I certainly had fun :).  My dad took me out driving (to get in more hours for my permit), and then, I made him a batch of muffins.  He wanted chocolate-chip muffins with pine nuts, so i whipped up a batch based on a recipe online.  I meant to take a picture, but my phone wouldn’t save it, and unfortunately, I don’t have a camera.

But here’s the recipe if you wanna try it out 🙂

I call them: Crunchy Java Chip Muffins


-1 cup of flour (i used white whole wheat)

-1 and 1/4 teaspoon of baking powder

-1/4 teaspoon of salt

-1 teaspoon of espresso powder

-1/3 cup of agave nectar

-1/4 cup of oil

-1 and 1/2 teaspoon of flaxseed mixed with 1 and 1/2 tablespoon of water

-1/2 cup of nondairy milk (i used vanilla almond milk)

-1/2 teaspoon of vanilla (unless you use vanilla almond milk)

-1/4 cup of chocolate chips (or however many you want!)

-1/4 cup of pine nuts (or try any other nut!)


1. Preheat the oven to 375 degrees F.

2. Mix the dry ingredients (besides the chocolate chips and pine nuts)

3. Mix the wet ingredients.

4. Combine the wet and dry. 

5. Fold in the chocolate chips and fill up some muffin paper things with the dough.

6. Cover each little muffin with the pine nuts

*makes six big muffins 🙂

Oh yeah! and enjoy 🙂

I also did the dishes for my dad cuz he likes it when he doesn’t have to do the dishes.

So sore…

So yesterday, I was going to post, but i was just so exhausted after I ran.  Conditioning has started, and I ran six miles for the first time in my life.  Granted, it took me around an hour to complete it and i was dead last, but i completed it :).  Heck, I ran farther than some of the guys on my team which really made me happy.  Hehe, it’s so worth all this soreness.

So, CCK has put up a challenge to have bloggers post a picture of themselves sans make-up, and frankly, I have no problem with that:

I’m pretty sure I’m not wearing make-up in this photo because i just got done with my run and i went to Fashion Bug to do my truth video to some random stranger for Speech Class.  Either way I’m all messy hehe.

So i really don’t have any good recipes.  I’ve mainly been sticking with breakfast foods for breakfast and lunch.  I tried out a super plump pancake recipe, and it was divine :).
Well, I’m off.
Do you ever feel insecure without make-up?
If i have a good reason to not wear make-up (like I’m rushed or it’s just not an event to wear make-up) then i don’t, but if everyone else is wearing it and looking all nice and pretty, then yeah, i do lol.

Silly Computer…

So, the reason i haven’t been posting is because our computer was on the fritz, but now, it’s all better so I’m back on the blog :).  Boy, I’ve had such a busy week!  Firstly, on Wednesday night, my mouth started bleeding profusely because my stitches or something had popped.  I got hardly any sleep, and by 6 in the morning it still hadn’t stopped, so we went to the emergency room where i got some anti-biotics.  It’s all better now.  I think it was just a result of too much chex cereal.  I’ll be more careful next time 🙂

Also, during the weekend, I had to get some blood drawn, but i got starbucks afterward so it’s all good :).  Not to mention, I went a friend’s grad party, and her mom, who is gluten intolerant and dairy intolerant (she’s allergic to the protein and lactose intolerant), made a seperate cake for me and her that was gluten-free and vegan 🙂  That made my day lol.

Finally, I’ve decided to give up the whole gluten-free thing and just go gluten-low cuz my mom wasn’t really on board and frankly, i enjoy wheat too much lol.  So, hopefully, her and mine symptoms will resolve themselves.

During the week I made some delicious homemade veggie burgers 🙂  They were super super good.  Even my brother liked them!

Looks kind of funky, but tastes amazing 🙂


– 1 and 1/2 cup of cooked pinto beans
– 1/2 cup of oatmeal
– 1/4 cup of hummus
– a dash of hot sauce (optional)
– any seasonings and peppers that you so wish 🙂
1. Mash the beans with the oatmeal and hummus
2. Mix in the hot sauce and peppers.
3. Heat up a frying pan with some olive oil, and fry these puppies up.
4. Takes about 4 minutes for each to cook. Flip them every minute or so.
5. *the most important part!* Enjoy  😀

Yum! Chexy no-bake cookies :)

Hello there 🙂

I hope everyone’s having a great summer.  I am so far.  Well, besides having to go to the doctor’s office, but it’s no biggy.  Just to see what’s up with my period lol.  Apparently on Saturday, I have to get some blood work done, and then on Sunday, I have to get an ultrasound to make sure that i don’t have Polycystic Syndrome or something like that.  Apparently, on that day, i have to drink 32 oz of water and hold it until they’re done.  Wow.  That’s gonna be fun… NOT.

Oh well, today was fun.  I went out running, and recently, i thought i might be getting shin splints but i didn’t have much pain running today so maybe not :).  Then, I drank a big protein shake with an orange, some peanut butter, and a leftover blondie.  Very good :).

Now, though, i’m waiting for my no-bake cookies to harden in the freezer :).

With chex cereal!

These are definately good!  AND with less sugar so i guess their healthy 🙂  All i know is that i was definately craving some no-bakes and these puppies hit the spot.

–1/3 cup of organic, brown sugar
–1/4 cup of non-dairy milk (i used coconut!)
–1/2 cup of peanut butter
— 1 and 1/2 cup of chex cereal
— 1/2 teaspoon of vanilla
1. On the stove bring the milk and the milk to a boil while stirring constantly.
2. Remove from the heat and mix in the peanut butter, chex and vanilla.
3. Dob spoonfuls of the mix onto a cookie sheet or something like that.
4. Place in freezer and wait for them to harden 🙂
… or just eat them as they are, i don’t care.
*makes approximately 10.*
Oh no! someone swiped one when i wasn’t looking! Oh wait, that was me 🙂

So, we got our air conditioning back yesterday and I’m super happy.  Air conditioning is probably the best invention ever right now 🙂

So I’m off the revel in my air conditioning and you had better be off making some no-bakes because right now, it is WAY to hot to be baking lol.
BTW, what’s your favorite cereal?
I don’t really know because it consistently changes hehe.

Busy weekend :)

Hello all 🙂

I had a super weekend.  Even though it started with getting my wisdom teeth pulled which was certainly NOT comfortable.  The bottom right one was the most painful, and it had three roots instead of two.  Not fun.  BUT it got better because we did some yard work at my dad’s house and had a cook out.  Also, I discovered that the roses we planted over my dog, Jackie’s grave were in full bloom and they looked absolutely gorgeous.

So so vibrant

I was so happy that they bloomed this year.  Last year at this time, they were all closed up and refused to bloom, but now, I’m pleased with the effort we put into them.  (I’m also happy they survived the winter).

Also, this weekend, I ended up getting a good quality protein powder from the grocery store which is sure to get my protein count up.
Great mixed with some almond milk 🙂

I’ve been adding this stuff to absolutely everything.  It’s sooo flexible 🙂  If that’s the right word…

Finally, yesterday, I went to the strawberry festival in our town with a couple of friends and ended up tasting the 7th hottest hot sauce in the world.  Hehe, my eyes were watering and i felt like i was on fire!  Thankfully, it went out when i shared a non-alcoholic margarita with a friend of mine.
Great great fun 🙂
Welp, I’m off to get some lunch ready.  I’m trying to develope a really great, easy veggie burger recipe but so far, it’s been hard 😦
I won’t give up though!

Teeth pulled and lots of chores (fun, fun…)

So, today started off with a super fun run, even though it was cloudy.  i passed one of my fellow cross country runners while i was out which was pretty cool.  Yesterday, I decided to try out CCK’s snickerdoodle blondie recipe (no chocolate chips, unfortunately), and they came out super well!  Unfortunately, mine don’t look too appetizing despite them actually being super yummy.

I ate one this morning with some coconut milk ice cream and a glass of coconut milk hehe.  So i’m pretty much coconut-out today already (strange, right? Cuz i just love coconut).

Also, today, I found out that you must run 500 miles this summer to get a new pair of shoes and NOT 300.  This was a major disappointment.  Oh well, even if i do run 300 miles, I’ll get into the 300 miles club which is still pretty cool.
To run 500 miles this summer, you’d have to run around 8 or so miles a day which i don’t want to do lol… Well, maybe one day I’ll work up to that, but I’m just not in that much shape to attempt that feat right now.
At around 2:30 today, i have to get my last two wisdom teeth pulled which doesn’t sound much fun.  Not to mention, after lunch i have to clean up the kitchen to earn some cash, but oh well, at least later i get to go to my dad’s and chillax 🙂
Also, there, i might have to experiment with some gluten-free recipes which sounds pretty fun.
Well, I’m off to go see about some lunch.  Happy Friday 😉

Summer is finally here :)

So school ended yesterday, and to celebrate, i ran 5 miles, then i rode bikes with a friend for four miles, and then, we swam a bunch.  I basically passed out last night lol.  So, we’ve sort of started the gluten-free thing (it’s really more of a low-gluten thing), and so far, i think it’s good.  I’ve started drinking more smoothies (that inevitably have coconut milk and peanut butter in them), eating more salads, and eating plenty of larabars 🙂 (as well as more delicious stuff).

Yesterday, for breakfast, I had something I’ve been wanting to try for a long while:

Overnight Oats 🙂

Yummy 🙂 Great for a hot day

Ingredients included:

-1/2 cup of oats
-1 cup of non-dairy milk (I used coconut :P)
-Any ingredients you so desire in your oatmeal (I put in peanut butter and flax seed).
1. Mix up the oats and milk
2. Put a little plastic bag over it, and set it in the fridge overnight
3. Finally, in the morning, take it out and put in your favorite oatmeal toppings.
Our airconditioning is broken so i really wanted something cool for breakfast as well as oatmeal, but how to solve this problem?

Soon, I’m gonna try my hand at gluten-free bread and other such desserts, and if gluten turns out to be the problem, then, we’ll just eat low-gluten and not give it up completely because, I mean, it’s difficult enough to find vegan items, not to mention gluten-free.
Well, I have an eventful summer in my midst– running 300 miles, going to Kings Island, swimming, cross country camp… I’m so excited!

Happy Memorial Day!

I just wanted to thank all of the veterans who have risked and gave their lives protecting our freedom.  I cannot even begin to imagine giving that great of a sacrifice. Thank you.

Unlike most Americans who are likely grilling today, my family stayed inside, surrounded by fans, eating pizza, and watching movies.  (not to mention i had to study for finals which are coming up tomorrow). 

From Dominos, my brother and mom ordered a philly cheese steak (yuck, even before i was vegan, i really hated it).  I however had a delicious cheeseless pacific veggie pizza.  Yum :). 

Also, before the impending heat wave threatened to suffocate me, i went out on a lovely 5-mile jog and on a new route too ;).  I really love new routes lol.

Early this weekend, on Saturday, I had a family outing with my older brother, my 5-year-old nephew, his mom, my younger brother, and my mom.  We went out to a farm, and my nephew got to enjoy the animals there.  He loved feeding the goats and petting this adorable, doe-eyed calf.

This guy was sooo adorable

Also, there was a festival real close by so we inevitably took my nephew to ride some rides.

Shopping and… finals :(

So, only about five days left of school, and I’m getting pretty ansy (if you haven’t noticed).  For my speech final, i had to film myself going up to a complete stranger and giving them a speech.  I felt like a i did really bad, but hopefully my speech teacher won’t think so :).

Also, while i was out harrassing a worker at a local clothing store, i got a hold of some capris, a new running outfit, and a new wallet (i lost my old wallet as well as the permit that happened to be in it :(…

I'm gonna look sooo chic 😉

Soooo, I’m thinking for this weekend, some no-bakes for a new recipe.  But these are gonna be some, like, genuine no-bakes, not those odd ones i made before lol.
Totally looking forward to the summer, and hopefully, i can come up with some’s good milkshake recipes because, honestly, who doesn’t love milkshakes?
Huh, this kind of reminds me of a fergi song lol.

So just recently we had a tornado warning in our area and apparently there was an actual tornado.  It’s all good though, neither mine nor any of my friends or family were utterly destroyed 🙂

I hope.

So, the spanish party went well… I was the only one who remembered to bring something lol.   My spanish teacher made lechon– a kind of spanish pork thing– which was kind of random lol because it’s mid-morning that we’re having this party, like right before lunch ^^  Of course i didn’t want any, but i did help myself to some struedel bites that were “accidentally vegan” hehe, and i had two cookies and a cup of coffee, so guess who was super hyper for gym class??

Apparently, everyone really liked my cookies, someone even asked me how i made them? lol, just a simple shortbread recipe 😛

One of my “friends” though wouldn’t try any because she knew they were vegan, and apparently, to her, if you eat vegan, you always eat bad food. She’s not really much of a friend– always putting me down, nagging me (like my mother), and always teasing me about my diet etc.– but i want to be nice to her because i know that a lot of people don’t like her… I just want some distance.

Sorry to put my gossip on her (would that be considered gossip), but i had to get that off my chest…

Well, I’ve been eating a gluten-free lunch so far this week because i’ve started experiencing more stomachaches.  I really hope this is just from too many beans or peanut butter or something because i really like Subway lol.

If anyone out who is gluten intolerant/sensitive can clue me in or something that would be mucho appreciated 🙂

Also, do you have a friend who gets under your skin, but you don’t want to hurt them by making some distance?
